Pollo Al Vino

INGREDIENTS

  • 4-Lbs of Chicken Breast
  • 1-Medium Onion Chopped
  • 4-Garlic Cloves minced
  • 4-Yukon Gold Potatoes Cubed
  • 4-Ripe VIne Tomatoes Choped
  • 2-Sprigs of Rosemary
  • 1-Tbs. Tarragon
  • 1-tsp. Sage
  • 2 Cups of Wine
  • Black pepper to taste
  • Sea Salt to Taste

PREPARATION

Marinade the chicken with the wine Herbs, Tomatoes, Black Pepper and Sea Salt for 4 hours in the refrigerator.

Pre heat the 7 Qrt Roaster for 5 minutes add the chicken breast Reserve the marinade, brown the chicken pieces lightly.

Add the Onion, Garlic, Potatoes and the marinade. Cover, turn to medium, the valve clicks turn to low. Continue to cook for 20 minutes, & Serve
