Savory Pineapple Turkey

Savory Pineapple Turkey By Jael Tanti


  • 1 Fresh Organic Turkey
  • Brine for Turkey
  • 4 Tbs. Cracked Pepper
  • 1 1 Bottle of Chardonnay (May substitute with 2 cups of fresh squeezed Orange Juice)

Savory Pineapple Glaze

  • 1 Fresh Organic Pineapple (Peeled and blended)
  • 1 Tbs. of Oregano
  • 1 Tbs. of Thyme
  • 1 Tbs. of Sage
  • 1 Tbs. of Turmeric
  • 1 Tbs. of Tarragon
  • 1/4 cup of Raw Honey
  • 1 tsp. of Cinnamon
  • 4 Tbs. of melted Butter
  • 1 Cup Fresh Orange Juice
Boiling Water......


  • 4 Rosemary sprigs ( For inside the Turkey)
  • 6 Garlic cloves minced
  • 1 Tbs. of Sea salt


Step One
Make a Brine with one bottle of Chardonnay and 1/4 cup of sea salt and set aside.

Step Two
Wash the turkey inside out with water, drain and rub the inside with the minced garlic.

Step Three
Place the Turkey in a big bowl, and pour on the Brine inside and out of the Turkey cover and place in the refrigerator overnight.

Step Four
Pre-Heat the Turkey to 350 F. Degrees and Bring the Turkey out of the refrigerator 4 hours prior to the planned serving time, discard the brine, and pour boiling water inside and out of the Turkey and rub with the Savory Pineapple glaze.

Step Five
Make the pineapple glaze: Mix all the herbs with the honey, butter, Sea salt and orange juice blend well with a fork and rub the turkey with it inside and out.

Step Six.
Place in an Oval Bake dish and inside of a paper bag and place in a pre-heated oven at 350°F. for 3.5 hours.

Step Seven
Take it out of the oven and let it rest for 15 minutes, remove the paper bag and begin to carve and enjoy the most delicious, moist, succulent Turkey
